Mixed Salad with Avocado and Arugula

Ingredients (serves 2–4):

  • 3 cups fresh arugula
  • 1 cup mixed greens (spinach, romaine, or spring mix)
  • 1 ripe avocado, sliced or diced
  • ½ cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • ¼ cup cucumber, thinly sliced (optional)
  • 2 tbsp crumbled feta or goat cheese (optional)
  • 2 tbsp roasted sunflower seeds or chopped nuts (like almonds or walnuts)

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice (or balsamic vinegar for a sweeter twist)
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup (optional)
  • Salt and black pepper, to taste

Instructions:

  1. Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon, honey, salt, and pepper. Set aside.
  2. Assemble the salad: In a large bowl, combine arugula, mixed greens, tomatoes, onion, cucumber, and avocado.
  3. Toss gently with the dressing until well coated.
  4. Top with crumbled cheese and sunflower seeds or nuts. Serve immediately.
