Chocolate Lava Cake

Ingredients (serves 2):

  • ½ cup (85g) semi-sweet chocolate chips
  • ¼ cup (60g) unsalted butter
  • ¼ cup (30g) powdered sugar
  • 1 whole egg
  • 1 egg yolk
  • 3 tbsp all-purpose flour
  • A pinch of salt
  • Butter and cocoa powder (for greasing ramekins)

Instructions:

  1. Preheat oven to 425°F (220°C). Grease two small ramekins with butter and dust with cocoa powder.
  2. In a microwave-safe bowl, melt chocolate chips and butter together (about 30 seconds). Stir until smooth.
  3. Whisk in powdered sugar until combined.
  4. Add the egg and extra yolk, whisking well.
  5. Stir in flour and a pinch of salt until just mixed.
  6. Divide batter evenly between the prepared ramekins.
  7. Bake for 10–12 minutes, until the edges are firm but the center is still soft.
  8. Let cool for 1 minute, then carefully invert onto plates.
  9. Serve immediately with vanilla ice cream or berries.
