Ingredients (serves 2–4):
- 3 cups fresh arugula
- 1 cup mixed greens (spinach, romaine, or spring mix)
- 1 ripe avocado, sliced or diced
- ½ cup cherry tomatoes, halved
- ¼ small red onion, thinly sliced
- ¼ cup cucumber, thinly sliced (optional)
- 2 tbsp crumbled feta or goat cheese (optional)
- 2 tbsp roasted sunflower seeds or chopped nuts (like almonds or walnuts)
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice (or balsamic vinegar for a sweeter twist)
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup (optional)
- Salt and black pepper, to taste
Instructions:
- Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, Dijon, honey, salt, and pepper. Set aside.
- Assemble the salad: In a large bowl, combine arugula, mixed greens, tomatoes, onion, cucumber, and avocado.
- Toss gently with the dressing until well coated.
- Top with crumbled cheese and sunflower seeds or nuts. Serve immediately.
