Ingredients (serves 4):
- 2 cups (500 ml) heavy cream
- ¼ cup (50 g) granulated sugar
- 1 tsp pure vanilla extract
- 1 packet (2¼ tsp) unflavored gelatin
- 3 tbsp cold water
- Fresh berries or berry sauce (for topping)
Instructions:
- In a small bowl, sprinkle gelatin over cold water. Let it bloom for 5–10 minutes.
- In a saucepan, heat the cream and sugar over medium heat. Stir until sugar dissolves (do not boil).
- Remove from heat and stir in vanilla extract.
- Add the bloomed gelatin to the warm cream mixture. Whisk until completely dissolved.
- Pour the mixture into 4 small ramekins or dessert glasses.
- Chill in the refrigerator for at least 4 hours, or until set.
- To serve, unmold by dipping ramekins briefly in warm water and inverting onto plates.
- Top with fresh berries, berry sauce, or a drizzle of honey.
