Ingredients:
- 1 lb (450g) sirloin steak, cut into 1-inch cubes
- 4 cloves garlic, minced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp fresh thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil until shimmering.
- Add the beef cubes in a single layer (do this in batches if needed). Sear for 2-3 minutes on each side until browned and cooked to desired doneness. Remove and set aside.
- Reduce heat to medium. Add butter and minced garlic to the same pan. Stir constantly for about 30 seconds until fragrant.
- Return the beef to the skillet, toss to coat in garlic butter, and cook for another minute.
- Add thyme or rosemary if using, and garnish with chopped parsley before serving.
